Sunflower Cupcakes

Last weekend, the Children’s Garden in our town held a wonderfully creative garden party for the kids. There were scarecrows to be made, printed cards to decorate, peas and carrots to pick and face painting a plenty. But what CP#1 and #2 loved best were the adorable, sunflower cupcakes. MP told them they could have just one, but she’s pretty sure the pair helped themselves to more when she wasn’t looking. And really, who could blame them?

In the mean time, these cupcakes are so easy to make. You’ll need:

• Store bought vanilla cake mix or your own cupcake recipe

• Vanilla frosting

• Mini marshmallows

• Yellow sugar sprinkles

• Mini chocolate chips

• Silver foiled cupcake liners

1. Prepare your cupcakes according to the box instructions or a favorite recipe.

2. When the cupcakes are done and cooled, frost them with white icing.

3. Cut mini marshmallows in half (diagonally) using kitchen shears.

4. Pour the yellow sprinkles into a dish, and dip the cut side of the marshmallows in the sprinkles until coated.

4. Arrange the marshmallows (yellow side up) in rows, beginning with the outer rim of the cupcake and working towards the center. Be sure to leave room for the mini chocolate chips.

5. Carefully place the mini chocolate chips in a circle at the center of the flower.

So easy, and so incredibly cute! The team likes these sunflower cupcakes so much we might just throw a garden party of our own.
