MP’s friend from book group always makes the most delicious, buttery desserts. Her sugar cookie recipe really is the best. It’s our go-to, traditional holiday cookie. The dough is so easy to work with and the cookie itself is perfect with a drizzle of semi-sweet chocolate, decorated with Royal icing or topped with colorful sugar sprinkles.
Best Ever Sugar Cookies
Ingredients:
1 cup butter, softened (we like Kate’s Homemade)
2/3 cup of sugar
1 egg
1 tsp vanilla
1/2 tsp salt
2-1/2 cups sifted flour
Using a stand mixer or hand mixer, cream together the softened butter and sugar. Next, beat in the egg. Add vanilla, salt and flour and mix until all ingredients are well blended. Gather the dough into a compact ball and cover it in plastic wrap. Chill the dough 3-4 hours.
After taking the dough out of the refrigerator, allow it to get to room temperature (about 30 minutes). While you’re waiting, preheat the oven to 350º. Then generously flour a kitchen counter or large cutting board. When it’s soft enough to work with, roll out the dough. Have the kids dip the cookie cutters in flour before cutting shapes (this helps prevent the dough from sticking to the cookie cutter).
Once the cookies are cut, place them on a cookie sheet. Bake about 8-10 minutes or until lightly browned. Place the cookies on a cooling rack 10 minutes before decorating.
