Family Favorites: Chocolate Pecan Pie

Happy almost Thanksgiving, everyone! We adore this time of year because it’s the kick-off to so many good things, like an afternoon spent making Thanksgiving pies. This fun, family tradition includes making one apple pie, one pumpkin pie and a new-to-us pie. This decadent, chocolate pecan pie began as a new-to-us recipe and quickly rose to the level of family favorite. The pie has a rich buttery flavor made even better with the satisfying combination of chocolate and pecans.

You’ll need: 

• One prepared pie crust for a 9-inch pie

Note: While you can make your own pie crust with this recipe (we like this simple one), to save time, we purchase 9- inch frozen pie shells from Wholly Wholesome, which we love for their straightforward ingredients. 

The filling takes only a 5-10 minutes to put together with kids, and we can promise you will love the results!

Filling:

1-1/4 cups of light corn syrup
1/2 cup of light brown sugar
1/4 cup granulated sugar
3 eggs, beaten
3 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1-3/4 cups pecan halves
3/4 cup of semi-sweet chocolate chips
Whipped cream (optional)

To start, preheat oven to 350º F. In a large bowl, whisk together the first 8 ingredients: corn syrup through salt. The mixture should have a thick consistency. Stir in the pecans and set bowl aside.

Next, take out your prepared piecrust. Layer the bottom of the crust with chocolate chips. Then fill the remainder of the piecrust with pecan filling.

Bake until the center is set, approximately 50-60 minutes. Allow the pie to cool completely. Serve with whipped cream, if you like.
